- Oatmeal Cookie Crust:
1 cup all-purpose flour
1 cup rolled oats
3/4 cup brown sugar
12 tablespoons butter, softened
- For the Homemade Apple Filling Option:
2 tablespoons butter
3-4 medium apples, peeled, cored, and diced into 1/4-inch cubes
1/3 cup brown sugar
3 tablespoons water
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon + 1 teaspoon cornstarch
2 tablespoons water
- For the Canned Apple Filling Option:
1 can apple pie filling

Instructions
- Prepare the Oatmeal Cookie Crust:
Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
In a large bowl, combine the flour, rolled oats, brown sugar, and softened butter. Mix until crumbly.
Press a heaping tablespoon of the mixture into the bottom of each muffin cup, pressing firmly to form a crust.
Bake for 8-10 minutes, or until lightly golden. Remove from the oven and let cool.
- Make the Homemade Apple Filling (if using):
In a medium saucepan, melt the butter over medium heat.
Add the diced apples, brown sugar, 3 tablespoons water, cinnamon, and nutmeg. Cook, stirring occasionally, until the apples are soft and the sugar is dissolved.
In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the apple mixture and cook until thickened. Remove from heat and let cool.
- Assemble the Apple Crisp Bites:
If using canned apple pie filling, spoon it directly into the cooled crusts, filling each cup generously.
If using homemade apple filling, spoon the cooled mixture evenly into each crust.
Top each apple-filled crust with a spoonful of the remaining oatmeal mixture.
Bake for 10-12 minutes, or until the tops are golden brown.
- Finish with Caramel (optional):
Drizzle caramel topping over each apple crisp bite before serving.
